Ingredients


Makes: 4 servings
  • 1/4 C (60 ml) mayonnaise
  • 1/2 Tbsp (7.5 ml) Chipotle Aioli Mix
  • 1 tsp (5 ml) lemon juice, optional
  • 1 lb (450 g) ground chicken or pork
  • 1 Tbsp (15 ml) Asian Stir-Fry Seasoning
  • 1 green onion
  • 1 C (250 ml) shredded cabbage
  • 1/4 English cucumber
  • 8 taco shells

Preparation


 
  • In a bowl, stir together mayo, aioli mix, and lemon juice, if desired. Set aside.
  • In Multipurpose Steamer, combine meat with seasoning. Cover; microwave on high until meat is cooked through, 3-5 min.
  • Meanwhile, thinly slice green onion. Using a peeler, make cucumber ribbons.
  • Spoon meat mixture into taco shells. Top with veggies and a dollop of aioli.

Tip


 

Make it vegetarian: Swap chicken for 1 lb (450 g) cubed firm organic tofu.
